Java or Bedrock?

Java for PC players and the plugin and mod ecosystem; Bedrock for phones, consoles and Windows. A Java server can add Geyser to accept Bedrock players too.

Can I install plugins and mods?

Yes. Upload them through the file manager or SFTP. Forge and Fabric packs are supported; switch the flavor from the panel first.

Which versions can I run?

Any version the flavor supports. Set it in the startup variables and the panel downloads the right build on the next start.

How many players fit in 8 GB?

Around 10 to 25 on Paper with a normal plugin set. Render distance and farms move that number more than player count does.
